This I just made from party leftovers, but it turned out great. It's cold and rainy where I'm staying, so it was a good way to warm up and see a few sunny colors in today's grey mist.
Another good thing: this recipe's pretty cheap!
Ingredients (for three):
1 red onion
1 cup rice
1 tomato
1 yellow bell pepper
1 orange bell pepper
1/2 cup fresh minced coriander/cilantro leaves
1 pinch seat salt
3 cayenne peppers
3 garlic cloves, crushed ans minced
The juice of 1 lime
1 tablespoons olive oil or coconut oil, according to taste
ground black pepper (optional)
Bring water to a boil in a medium size pan. Add rice and leave uncovered for 15 minutes. Meanwhile, peel and mince the red onion, seed and dice the peppers, and dice the tomato. The smaller your veggies are, the easier it'll be to stir them into the rice later. When the rice is ready, drain the extra water and place the rice back in the pan (away from heat) though. Add the onion, tomato garlic, cayenne, oil and lime juice. Stir well. Add the remaining ingredients except for the coriander, and stir again. Leave covered for 1-2 minutes.
Finally, you can serve it immediately with the fresh coriander on the side (it tastes better but it doesn't heat up) and if is some left, keep it in the fridge and reheat later.
