Make Your Own Chocolate Bar

Did you know that most of the great nutritional values of cacao perish once is processed? And that milk powder inhibits the others? More details stay put for an upcoming chocolate post, but in the meantime, here is a recipe to make your own nutritious chocolate bar and happily absorb all the antioxidants and anti-depressants you can get!

This one is very dark and bitter with just the sweetness of honey. Between the bee pollen, honey, cacao, curcuma, walnuts and chilies, it's also pretty good for your brain and mental activities, like writing a paper or an article.




 The Chocolate in the Brain Bar

Ingredients for 1 batch:
1/3 cup cacao butter, shredded
3 tablespoons cacao powder
1-2 tablespoons honey (depending on your taste)
1 tablespoon bee pollen
1 teaspoon shilajit powder
1 teaspoon curcuma powder
1 teaspoon chili powder
3 tablespoons mesquite powder
3 tablespoons crushed raw walnuts


Gently melt the cacao butter over a double-boiler. As soon as it's melted (don't let it boil), take it away from the heat, and add cacao powder, mesquite powder and other powdered ingredients. Mix well until all powder are evenly spread around. Add bee pollen and walnuts, stir again. Pour over molds or baking paper. Refrigerate at least 1 hour, until the chocolate is firm again, the it's ready to eat!

Once you've made your first batch,  you can start playing around with ingredients, as long as you have raw cacao powder, cacao butter and a sweetener (e.g. agave syrup, raw bee pollen, raw honey, maple syrup, mesquite, cinnamon).
