When I was a very little French girl, I used to prefer “green fries” (think green beans sautéed in garlic and fresh herbs) to the more trivial potato fries. No wonder I later became so fond of what I like to call green chips. Not unlike my childhood fries, Kale chips are intensely flavorful. These light and crispy little treats are bursting with that green goodness more-titillating-than-salt tastiness. They’re also packed with vitamin A and vitamin C in addition to being a decent source of protein. And for those who are counting calories, they only represent about 100 calories per serving, making a healthy and nutritious snack. Since they are a dry raw food, they’ll easily tag along when you’re on the run all day and need a little boost half way. They’ll also become a great last-minute and low maintenance party nibbles when you’re entertaining friends.
The last bag I went through were the Zesty Nacho Kale Chips by Rhythm Chips. Their ever so slightly spicy and cheesy flavor made them delicious on their own, and a rawliscious addition to salads and other dishes…for more info on Rhythm Chips, check out their page at http://www.dailyjuice.org

Zesty Creamy Dandelion Salad
Ingredients for 2-3
1/2 bunch dandelion leaves, rinsed, pat dry and chopped
1 zucchini, rinsed and diced
1 carrot, peeled and sliced
1 red bell pepper, rinsed, seeded and cut in small dices
2 tablespoons tahini
1 tablespoon hemp butter
2 tablespoons apple cider vinegar
1 garlic clove, peeled and minced
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon chili powder
salt and pepper to taste
1 bag (2.0 oz) raw zesty nacho kale chips
Mix tahini, hemp butter, apple cider vinegar, garlic, turmeric, chili powder and cumin together.
Toss in all veggies together. Pour dressing over the vegetables and mix well. Sprinkle with crushed zesty nacho kale chips and mix again just before serving.
Add salt and pepper according to taste…once you’ve had a bite.
Nacho Rice
Ingredients for 1-2
1 Jicama, peeled and ground/shredded
1 tablespoon minced cilantro
1 garlic clove, minced
1 tomato, minced
the juice of 1 lime
2 tablespoons avocado oil
1/2 bag crushed zesty nacho kale chips
salt and chili to taste
Simply mix all ingredients up together and enjoy.
Guacamole Pudding
Ingredients for 2
1 ripe avocado (keep the avocado shells)
the juice of half a lemon
1 tablespoon olive oil
a few cherry tomatoes, minced
1 tablespoon minced jalapeno pepper
1/3 cup crushed zesty nacho kale chips
1 pinch salt
Mash avocado with lemon, olive oil, and salt. Once you have a smooth paste, mix in jalapeno and cherry tomatoes. Place the cream back into avocado halves and top with the crushed kale chips before serving.
